Vegetable Sandwich
You will get this sandwich at many road side stalls in Mumbai. Its a simple vegetable sandwich liked by young and old. The modest tastes of all the vegetables is elevated by the use of coconut coriander chutney.

Ingredients
- 2 Medium Potatoes
- 2 Medium Onion
- 2 Medium Tomatoes
- 1 Medium Cucumber
- 1 Cup Green Coconut Chutney
- 8 Cheese Slices
- 16 Bread Slices
- 1 Tbsp Sandwich / Chaat Masala
- 100 Gm Salted Butter
Instructions
- Boil the potatoes until they are fork tendered.
- Cut onion, tomatoes, cucumber into this slices.
- Apply butter and green chutney to bread slices. Sprinkle sandwich/ chaat masala. Repeat this process for all the bread slices.
- Put onion, cucumber, potato, tomato slices on the bread.
- Add cheese slice.
- Put another bread slice on top of sandwich. Cut the sandwich and serve it.
Notes
I have used brown bread in this sandwich. White bread or multi-grain bread slices can also be used.
