Paneer Peshawari
This is a rich vegetable dish. The veggies are cooked in rich cashew and cream based gravy. We always used to order it from out favorite restaurant. That gave me an idea to re-create its recipe at home. Try it. It is fairly easy to cook. It can be eaten with Paratha/Roti/Naan.

- 200 Gm Paneer
- 1 Green Bell Pepper
- 1 Medium Carrot
- 2 Medium Potatoes
- 3 Medium Onions
- 8-10 Green Beans
- 1/2 Cup Peas
- 1-2 Green Chili
- 20 Garlic Cloves
- 20 Cashews
- 2 Green Cardamom
- 2 Inch Cinnamon Stick
- 5-6 Cloves
- 7-8 Whole Black Pepper
- 1/2 Tsp Fennel Seeds
- 1 Tsp Kasoori Methi
- 1 Tsp Coriander Powder
- 1/2 Tsp Cumin Powder
- 1 Bay Leaf
- 4 Tbsp Oil
- 1/2 Tsp Cumin Seeds
- 1/4th Tsp Asafoetida
- 1 Tbsp Sugar
- 2 Tbsp Fresh Cream
- 1 Tbsp Plain Yogurt
- 1 Cup Water
- Salt
Instructions
- Soak the cashews in water for 1 hour. Alternatively you can put cashews in a microwavable bowl along with water and microwave it for 1 minute.
- Pressure cook peas.
- Chop onions, carrot, green bell pepper, potatoes. Make big pieces of paneer.
- In a pot heat 1 tbsp oil. Fry 1 onion, cashews, garlic cloves, fennel seeds and green chilis.
- Make a paste in a blender.
- In a pot heat remaining oil. Add cumin seeds. When cumin seeds starts to sputter add asafoetida, green cardamom bay leaf, black peppercorn, cloves and cinnamon stick.
- Add remaining onion, potato, carrot, green beans, peas, water and cook for 5 minutes on medium heat covering the pot.
- Add green bell pepper and saute for 5 minutes.
- Add coriander powder, cumin powder,salt, sugar and kasoori methi. Mix well.
- Add puree and mix well. Cook it for another 2-3 minutes.
- Add fresh cream and cook for couple of minutes.
- Add paneer cubes and saute for 5 minutes.
- Turn off the gas. Add well beaten plain yogurt and mix well. Cook it for 5 minutes.
