Red Pumpkin Paratha

Red pumpkin is my daughter’s favorite. Normally we eat steamed red pumpkin. One day I wanted to give it in her lunch box. So I have created this recipe. The recipe is simple and quick to prepare especially during the hectic morning schedule.

Ingredients
  

  • 1 Cup Grated Red Pumpkin
  • 4 Tbsp Plain Yogurt
  • 1/2 Tsp Coriander Powder
  • 1/2 Tsp Cumin Powder
  • 1/2 Tsp Ajwain
  • 1/2 Tsp Red Chili Powder
  • 1/2 Tsp Turmeric Powder
  • 1 1/2 Cup Wheat Flour
  • Fresh Coriander Leaves (Chopped)
  • Salt
  • Oil

Instructions
 

  • Mix together grated pumpkin, yogurt, coriander powder, cumin powder, ajwain, red chili powder, turneric powder, fresh coriander leaves, salt.
  • Add wheat flour and knead a dough.
  • Roll a paratha.
  • Roast it on a pan applying oil on both the sides.
