Mexican Bean Wrap

Mexican bean wrap is a delectable fusion of many veggis, beans and cheese packaged in a flour tortilla. Instead of using store bought tortilla I use a simple home made tortilla. The dish is definitely a crowd pleasure and also very nutritious.

Ingredients
  

For Wrap:

  • 3 Cup All Purpose Flour
  • 1 1/4th Cup Cup Water
  • 4 Tbsp Oil
  • 1/2 Tsp Salt

For Stuffing:

For Caramelized Onion:

  • 7 Medium Onions
  • 2 Tbsp Sugar
  • 4 Tbsp Vinegar
  • Salt

Other Vegetables for Stuffing:

  • 400 Gm Button Mushrooms
  • 3 Bell Peppers
  • 1 Tbsp Oil
  • 5 Medium Tomatoes
  • 1/2 Cup Jalapenos
  • 1 Cup Red Kidney Beans (Rajma)
  • A Pinch Of Baking Soda
  • 300 Gm Garlic Mayonnaise
  • 200 Gm Processed Cheese
  • 100 Gm Butter
  • Salt

Instructions
 

  • Soak the kidney beans in water for 7-8 hours. Cook it in the pressure cooker adding double the water and a pinch of baking soda and 1/2 tsp salt. Drain the excess liquid on a strainer.
  • Knead a dough with all purpose flour, water, oil and salt. The dough should be a pliable. 
  • Roll the dough and roast on a griddle to make the wraps.
  • Julian onions. Cook the onion in a pot combining it  with sugar and vinegar on a medium heat for about 10 minutes.
  • Remove the stems and wash the mushroom. Pan fry them from both the sides till all the moisture is gone. Seasoned them with salt. Chop them finely.
  • Julian the bell peppers. Stir fry them with 1 tbsp of oil on medium heat for 5 minutes. Seasoned them with salt.
  • Remove the seeds from the tomatoes and chop them finely. Keep them on a tissue paper to remove as mush moisture as possible.
  • Finely chop the jalapenos.

Assembling The Wraps:

  • Take a wrap. Apply some garlic mayonnaise. Add onion, mushroom, bell pepper, red kidney beans, tomatoes, jalapenos and grated cheese on the half part. Fold the other half part.
  • Heat the pan. Apply some butter on one side of the wrap and keep that side on the pan. Then apply butter on the other side and heat it on the other side.
  • Cut it in half and serve.

Notes

You can buy ready made flour tortillas at the supermarket if you don’t want to make them.
