Lal Bhopla Kadhi
This is another variation of buttermilk based kadhi’s. The sweet taste of lal bhopla (Pumpkin) is well balanced by buttermilk. The peanuts give this kadhi nice crunch. This kadhi can be served with plain white rice. This is a great recipe when you are in a hurry or tired and want to eat a simple hearty home cooked meal.

- 2 Cup Chopped Pumpkin
- 500 Ml Buttermilk
- 1/4th Cup Unsalted Peanuts
- 1 Tbsp Gram Flour
- 1 Stalk Of Curry Leaves
- 2 Green Chilis
- 1 Tbsp Oil
- 1/4th Tsp Turmeric Powder
- 1/2 Tsp Cumin Seeds
- 1/4th Tsp Asafoetida
- 200 Ml Water
- 4 Tsp Sugar
- Salt
Instructions
- Soak the peanuts in the water for 1 hour. Pressure cook them (2-3 whistles).
- In a pot heat oil. Add cumin seeds. When cumin seeds starts to sputter, add turmeric powder, asafoetida, curry leaves, green chilis.
- Add cooked peanuts and pumpkin pieces. Add 1/4 cup water and salt. Let it cook on a medium heat for 5 minutes covering the pot.
- Mix gram flour and water in the buttermilk.
- After the pumpkin is fork tender, add buttermilk, sugar.
- When the curry starts boiling switch off the burner.
Notes
I have added sugar as per my family’s taste. We like our kadhi a little on the sweeter side. You can add sugar as per your liking.
