Mawa Cake

Everyone in my family loves mawa cake. And the bakery  from which we buy the cake is not close to us. So one day after watching a mawa cake recipe on TV, I gave it a try. It tasted good but the taste was a bit different than the bakery one. So I made couple of changes and finally created this recipe. Hope you will also enjoy the cake.

Ingredients
  

  • 220 Gram All Purpose Flour (2 Cups)
  • 30 Gram Vanilla Custard Powder (4 1/2 Tbsp)
  • 250 Gm Mawa (2 Cups Grated)
  • 3 Eggs
  • 250 Gm Sugar (1 1/4th Cup)
  • 1 1/2 Tsp Baking Powder
  • 1/2 Tsp Cardamom Powder
  • 150 Gm Clarified Butter (Ghee) (3/4th Cup)
  • 1/4th Cup Sunflower Oil
  • 1/2 Cup Milk
  • 2 Tsp Vanilla Extract
  • 1/4 Tsp Salt

Method
 

  1. Preheat oven to 200 C.
  2. Melt the ghee in microwave or on a burner. 
  3. Take the melted ghee, milk , oil in a mixing bowl.
  4. Add 3 eggs and vanilla extract.
  5. Mix well with a whisk or with a electric beater just to combine.
  6. Sieve all purpose flour, custard powder,  baking powder, salt, cardamom powder in a separate bowl.
  7. Grate the mawa with smallest grater.
  8. Mix the dry ingrediates, mawa,  sugar and wet ingredients just to combine.
  9. Scoop the batter in muffin tin and bake for 18-20 minutes

Notes

I have used a regular convectional oven. Don’t over mix the ingredients as it will be more dense. 
I have baked cup cakes however you can also bake this cake in 9 inch bake pan. It will take around 30-35 minutes to bake the cake. Insert the toothpick at the center of the cake and if it comes out clean then the cake is done.
