Palak Ki Anokhi Sabji

Ever since I started cooking I have tried many recipes of traditional spinach dishes. I wanted to make a spinach recipe which is offbeat from the traditional ones. The use of milk powder in my recipe gives a bit of sweet taste which goes well with spinach and binds the ingredients. The garlic/chili puree provides the heat. The fried cashews provide additional flavor and crunch.

This dish can be eaten with chapati or paratha.

Ingredients
  

  • 1 Bunch Of Spinach
  • 1 Cup Chopped Onion
  • 1-2 Green Chilies
  • 8-10 Garlic Cloves
  • 1 Tsp Kasoori Methi
  • 10 Cashews (halves)
  • 3 Tbsp Milk Powder
  • 2 Tbsp Oil
  • 1/2 Tsp Cumin Seeds
  • 1/2 Tsp Turmeric Powder
  • 1/4th Tsp Asafoetida
  • Salt

Method
 

  1. Wash and chop spinach leaves. 
  2. Chop onion and green chilies finely.
  3. Make a puree of garlic and green chilies in mixer with 1 tbsp water.
  4. In a pot heat oil. Fry cashews and keep them aside.
  5. In the same oil, add cumin seeds. When cumin seeds starts to sputter, add turmeric powder, asafoetida.
  6. Add chopped onion and green chili and garlic puree. Saute for a couple of minutes.
  7. Add chopped spinach and salt.
  8. Cover the pot with the lid and let the vegetables cook in the water released by spinach.
  9. Add kasoori methi.
  10. Add milk powder and saute for 5 minutes.
  11. Just before serving add fried cashews.
