Vegetable Pulav

This is a aromatic rice dish prepared with vegetables, spices and ghee. Also it is a one pot meal as this dish contains rice and veggis. This dish is a good option for kids lunch box. Pulav can be served with Tomato Saar or Cachumbar.

Ingredients
  

  • 3/4th Cup Basmati Rice
  • 1/2 Cup Green Peas
  • 1/2 Cup Julian Onion
  • 1/4th Cup Julian Carrot
  • 1/4th Cup Cashews
  • 1 Bay Leaf
  • 2 Cloves
  • 4 Black Pepercorns
  • 1 Inch Cinnamon Stick
  • 1/2 Tsp Cumin Seeds
  • 1/4th Tsp Asafoetida
  • 1 1/2 Tsp Ready Made Pulav Masala
  • 2 Tbsp Oil
  • 1 Tsp Ghee (Clarified Butter)
  • 2 Cup Water
  • Salt

Instructions
 

  • Cook peas in pressure cooker (1 whistle). 
  • Chop onion and carrot vertically (Julian).
  • Split the cashews. Wash rice.
  • In a pot heat oil. Add cumin seeds. When cumin seeds starts to sputter, add asafoetida, bay leaf, cloves, black peppercorn, cinnamon stick, onion and carrot. Saute it for 5 minutes.
  • Add peas and cashews and saute it for 5 minutes.
  • Add rice and saute for 5 minutes.
  • Add ready made pulav masala, salt and saute it for 1 minute.
  • Boil water. 
  • Add water to the mixture. Keep the lid and let the rice cook for 10 minutes on low heat.
  • Add ghee and cover the pulav for 5 minutes.

Notes

You can add more veggies like french beans, potato etc.
Don’t open the lid and stir for 10 minutes after adding water.
Ghee makes the pulav aromatic.
Biryani masala can be substituted if pulav masala is not avaliable.
