Fresh Turmeric Pickle

This is a very simple seasonal pickle made with fresh turmeric. It needs a handful of ingredients and it gets ready quickly. It is a really tasty condiment.

Ingredients
  

  • 250 Gm Fresh Turmeric
  • 1 Small Lemon
  • 2 Inch Ginger
  • 4 Tbsp Pickle Masala
  • 3/4th Cup Oil
  • 1 Tsp Mustard Seeds
  • 1/2 Tsp Asafoetida
  • Salt

Instructions
 

  • Peel the turmeric and ginger. Finely grate them.
  • Squeeze lemon juice. 
  • Mix grated turmeric and ginger. Add pickle masala and lemon juice and salt to it. 
  • Mix all the ingredients. 
  • In a pot heat oil. Add mustard seeds. When mustard seeds starts to sputter add asafoetida.
  • Cool the tadka and mix it in the pickle. 

Notes

This is a winter special pickle. The fresh turmeric is generally available in the winter. Keep this pickle in the refrigerator and it will stay good for a week.
While grating fresh turmeric your hands will be dyed with it’s yellow color. It will wash off in 1-2 days.
