Eggless Sooji Cake

I tried this sooji (semolina) cake at one of my friend’s house. I loved it !! She cooks it on a tava (griddle). As I do not have a baking pan which can be used on a tava, I have created a recipe which uses an oven instead. This cake tastes yummy and you can create all sorts of variations by using pineapple or rose essence.

Ingredients
  

  • 1 Cup Coarse Sooji (Semolina)
  • 3/4th Cup Granulated Sugar
  • 3/4th Cup Plain White Yogurt
  • 1/2 Cup Milk
  • 1/2 Tsp Baking Powder
  • 1/2 Tsp Baking Soda
  • 1/2 Cup Unsalted Butter
  • 1 Tsp Vanilla Essence
  • A Pinch Of Salt

Method
 

  1. Mix Sooji (Semolina), sugar, yogurt and milk. Keep it for 2 hours.
  2. Preheat oven to 180 C.
  3. Add baking powder, baking soda, vanilla essence, clarified butter (Ghee) and salt. Mix till all ingredients are combined.
  4. Line the baking pan with butter paper and pour the mixture. Tap the pan a couple of times to remove air pockets.
  5. Bake it for 35-40 minutes or until the toothpick comes out clean.

Notes

I have used room temperature butter so that it will gets mixed very well. Use butter paper in the pan. It helps to remove the cake without breaking it.
