Eggless Sooji Cake

I tried this sooji (semolina) cake at one of my friend’s house. I loved it !! She cooks it on a tava (griddle). As I do not have a baking pan which can be used on a tava, I have created a recipe which uses an oven instead. This cake tastes yummy and you can create all sorts of variations by using pineapple or rose essence.

Ingredients
  

  • 1 Cup Coarse Sooji (Semolina)
  • 3/4th Cup Granulated Sugar
  • 3/4th Cup Plain White Yogurt
  • 1/2 Cup Milk
  • 1/2 Tsp Baking Powder
  • 1/2 Tsp Baking Soda
  • 1/2 Cup Unsalted Butter
  • 1 Tsp Vanilla Essence
  • A Pinch Of Salt

Instructions
 

  • Mix Sooji (Semolina), sugar, yogurt and milk. Keep it for 2 hours.
  • Preheat oven to 180 C.
  • Add baking powder, baking soda, vanilla essence, clarified butter (Ghee) and salt. Mix till all ingredients are combined.
  • Line the baking pan with butter paper and pour the mixture. Tap the pan a couple of times to remove air pockets.
  • Bake it for 35-40 minutes or until the toothpick comes out clean.

Notes

I have used room temperature butter so that it will gets mixed very well. Use butter paper in the pan. It helps to remove the cake without breaking it.
