Eggless Sooji, Carrot And Walnut Cake

This is a recipe of healthy carrot and walnut cake. I have created this recipe by substituting all purpose flour with healthy sooji (semolina). I am sure everyone in your family will love it so go ahead and try it.

Ingredients
  

  • 1 Cup Sooji Coarse (Semolina)
  • 1 Cup Carrot
  • 1/4th Cup Walnut
  • 1 Cup Brown Sugar
  • 3/4th Cup Plain Yogurt
  • 1/4th Cup Milk
  • 1/2 Cup Unsalted Butter
  • 1/2 Tsp Baking Soda
  • 1/2 Tsp Cinnamon Powder

Instructions
 

  • Mix Sooji (Semolina), brown sugar, yogurt, milk. Keep it for 2 hours.
  • Grate carrot. Chop Walnut.
  • Preheat the oven to 180 C.
  • After 2 hours, add grated carrot, chopped walnut, unsalted butter, baking soda and cinnamon powder.
  • Lined the baking pan with unsalted butter.
  • Add the above batter to the baking pan. Tap the pan 2-3 times.
  • Bake the cake for 25-30 minutes. Insert the tooth pick at the center of the cake. If it comes out clean then the cake is done. Remove the cake and let it cool then decorate with icing sugar, walnuts and carrot.
