Soft Tacos

This is a Mexican dish. You can prepare all the ingredients beforehand and can assemble the tacos just before serving. I make my own tacos however you can also buy them in the grocery store. This dish is very popular in my household. It is a complete meal where you get vegetables, proteins, calcium and carbohydrate in one wrap. Serve salsa along with tacos.

Ingredients
  

  • 6 Soft Tortilla
  • 400 Gm Black Bean (Canned)
  • 100 Gm Sour Cream
  • 1 1/2 Cup Salsa
  • 1 Cup Cooked Rice
  • 1 Tsp Lemon Juice
  • 1/2 Tsp Cumin Powder
  • 100 Gm Grated Cheese
  • Chopped Lettuce
  • Salt

Instructions
 

  • In a pot heat canned black beans. Add cumin powder and salt. Simmer it for 5 minutes on low heat. Let it cool.
  • Mix cooked rice, lemon juice, coriander leaves, salt.
  • Take one soft tortilla wrap. 
  • Add layer of rice.
  • Add layer of black bean.
  • Add layer of salsa.
  • Add layer of sour cream.
  • Add layer of cheese.
  • Add layer of lettuce.
  • Fold in half and serve.

Notes

I have used store bought canned black beans however if you cannot find them, cooked rajma works just fine.
You can also use store bought salsa if you don’t want to prepare it from scratch.
