Lal Bhopla (Red Pumpkin) Gharge

Pumpkin gharge is a traditional Maharashtrian recipe. Red pumpkin and jaggery is a tasty and delicious combination. Rice flour gives the gharge a nice crunch. Jaggery cooked with pumpkin and deep fried creates a crunchy and nutty flavor. It tastes heavenly when served with clarified butter. This dish can also be served as snack.

Ingredients
  

  • 1 1/2 Cup Grated Pumpkin
  • 1 Cup Grated Jaggery
  • 2 Tbsp Wheat Flour
  • 1 1/2 Cup Rice Flour
  • A Pinch Of Salt
  • Oil For Frying

Method
 

  1. In a pan add grated pumpkin. Keep it on a low heat and steam it for 5 minutes. Keep it covered.
  2. Add grated jaggery.
  3. Saute it till the jaggery melts.
  4. Turn off the burner and let the mixture cool.
  5. Add wheat flour, rice flour, a pinch of salt and knead a dough.
  6. Let it rest for 10 minutes.
  7. Make small balls of dough.
  8. Take a plastic wrap. Apply some oil on it. Take one ball, press it by hand and make small patties.
  9. Fry the patties in the hot oil on medium heat.
  10. Serve it with clarified butter.
