Okra With Buttermilk

Okra with buttermilk is the dish my mother makes on Rushipanchami which generally comes on 2nd day in Ganesh Festival. With the simple and handful of ingredients, this dish will surely make you go for the second helping. Okra is a slimy vegetable. Buttermilk helps to neutralize all the slime of okra. Roasted peanut powder adds the nutty flavor and green chilies provide the punch to this dish. This dish can be served with Chapati/Bhakri.

Ingredients
  

  • 500 Gm Okra
  • 500 Ml Buttermilk
  • 3 Tbsp Roasted Unsalted Peanut Powder
  • 3 Green Chilies
  • 1 Cup Plain Yogurt
  • 2 Tsp Sugar
  • 5-6 Amsul
  • Fresh Coriander Leaves
  • Salt

Instructions
 

  • Chop okra.
  • In a pan mix chopped okra with whole green chilies, amsul and half of the buttermilk.
  • Cook it on a low heat covered with the lid.
  • Add remaining buttermilk as the liquid evaporates wile cooking.
  • Bruise the cooked green chilies to release their spicy flavour.
  • Let the mixture cool.
  • Add roasted peanut powder, yogurt, chopped coriander leaves, sugar, salt.
  • Serve at room temperature.
