Mango Cake

Summer’s in India are always associated with mango. In Maharashtra we get one of the best variety’s of mango called Alphonso. This recipe is my take on celebrating mango in a whole new way. I have used sooji instead of all purpose flour to make it more healthy.

Ingredients
  

  • 1 Cup Coarse Sooji (Semolina)
  • 1 Cup Mango Pulp
  • 1/2 Cup Sugar
  • 1/2 Cup Plain Yogurt
  • 1/4th Cup Milk
  • 1/2 Cup Softened Unsalted Butter
  • 1/4th Tsp Baking Powder
  • 1/4th Tsp Baking Soda
  • 1/2 Tsp Vanilla Essence
  • A Pinch Of Salt

Instructions
 

  • Mix Sooji, sugar, yogurt, milk and keep aside for 2 hours.
  • Preheat the oven to 180 C.
  • Add mango pulp, unsalted butter, baking powder and baking soda. Mix well.
  • Prepare the baking pan by brushing unsalted butter.
  • Pour the cake batter and tap the pan to remove any air bubbles.
  • Bake the cake for 25 minutes or until the toothpick inserted comes out clean.

Notes

Once the cake cools you can decorate it with mango pulp.
