Fresh Mango Pickle

Every year during summertime we enjoy this fresh mango pickle many times. This pickle does not need many ingredients. The recipe is very flexible as you can adjust the ingredients as per your liking.

Ingredients
  

  • 1 3/4th Cup Raw Mango
  • 4 Tbsp Mango Pickle Masala
  • 1/4th Cup Oil
  • 1/4th Tsp Mustard Seeds
  • 1/2 Tsp Asafoetida
  • 1/2th Tsp Red Chili Powder
  • Salt

Instructions
 

  • Chop raw mango into small pieces.
  • Add pickle masala and red chili powder and salt.
  • Mix well.
  • In a pot heat oil. Add mustard seeds.
  • When mustard seeds starts to sputter, add asafoetida.
  • Remove from the heat and let it cool.
  • Add the room temperature tadka to the raw mango mixture. Mix well.
  • Let it rest for 2 hours.

Notes

You can make this fresh raw mango pickle during summertime. This pickle can be kept in the refrigerator for up to one week. You can adjust the chili powder and pickle masala as per your liking.
