Sabudana wada
I have learned this recipe from my mother-in-law. She makes the best sabudana wada I have ever tasted. Sabudana wada is a classic Maharashtrian dish usually eaten on fasting days in many parts of Maharashtra. Sabudana (Sago) has a subtle taste. Green chilies, roasted peanut powder, sugar and salt completes all the taste elements like sweet, spicy and nutty. The wada is deep fried and is crispy on the outside while soft on the inside. This wada can be eaten as it is or can be served with a chutney.

- 2 Cup Sabudana (Sago)
- 4 Boiled Potatoes (3 Cups Grated)
- 8 Tbsp Roasted Peanut Powder
- 2 Tsp Crushed Green Chili
- 3 Tbsp Sugar
- Oil For Frying
- Salt
Instructions
- Wash and soak the sabudana (sago) in water for 5-6 hours. Leave about 1/2 inch water above Sabudana (Sago).
- You will notice that after 5-6 hours the sabudana (sago) has absorbed all the water and has puffed.
- Mix grated potatoes, crushed chili, roasted peanut powder, sugar and salt into soaked sabudana (sago).
- Make balls about 2 inch diameter.
- Fry it on medium heat until they are golden brown.
Notes
While making the balls don’t press it hard, it will leave the the wadas uncooked in the middle.
