Chole

Chole made from chick peas is a spicy Punjabi dish cooked in tomato-onion gravy. It is generally eaten with bhatura (large puris). It can also be eaten with jira rice.

Ingredients
  

  • 1/2 Cup Chick Peas
  • 2 Medium Onions
  • 2 Medium Tomatoes
  • 8-10 garlic Cloves
  • 2 Inch Ginger
  • 1 Small Bay Leaf
  • 1 1/2 Tsp Chole Masala
  • 1 Tsp Coriander Powder
  • 1/2 Tsp Cumin Powder
  • 1 Tsp Red Chili Powder
  • 1/2 Tsp Turmeric Powder
  • 1 Cup Water
  • 2 Tbsp Plain Yogurt
  • 2 Tsp Sugar
  • 3 Tbsp Oil
  • 1/2 Tsp Cumin Seeds
  • 1/4 Tsp Asafoetida
  • A Pinch Of Cooking Soda
  • Salt

Method
 

  1. Soak 1/2 cup chick peas in water for 8 hours. 
  2. Pressure cook in a cooker ( 3-4 whistles) with pinch of cooking soda and salt. Drain the water.
  3. Chop onions and tomatoes in small pieces.
  4. Crush garlic cloves along with ginger.
  5. Heat oil in a pan. Add cumin seeds, pinch of asafoetida, turmeric powder. 
  6. When the cumin seeds stars to sputter add crushed garlic and ginger, bay leaf.
  7. Add onions and tomatoes together. Cooking them together makes a nice gravy.
  8. Add salt and 2 tsp sugar. Cook it in its own juices without water over a low flame for 10 minutes.
  9. After it cooks add chole masala , coriander powder, cumin powder and red chili powder. Saute it for a minute.
  10. Add cooked chole. 
  11. Add water and simmer it for 10 minutes on low heat.
  12. Turn the flame off. Now add 2 tbsp beaten smooth plain yogurt and mix.
  13. Turn the heat on and simmer it for 5 minutes.

Notes

Use kashmiri chili powder as it adds a nice colour.
While adding curd turn off the flame as the heat can curdle the yogurt.
