Red Pumpkin Raita
Red Pumpkin Raita is a simple side dish. Red pumpkin has a bit sweet taste. Still I have added sugar as in our family we like this raita little bit on a sweeter side. Roasted unsalted peanut powder gives a nutty taste. Plain yogurt balances the raita. This raita has sweet, spicy, nutty taste. This raita can be served with Chapati/Dal-Rice.

Ingredients
- 1 Cup Chopped Pumpkin
- 2 Tbsp Roasted Crushed Unsalted Peanut Powder
- 2 Chopped Green Chilies
- 1/2 Cup Plain Yogurt
- 1 Tsp Sugar
- Fresh Coriander Leaves
- Salt
Instructions
- In a pot take chopped pumpkin. Add 1 cup water and boil it for 10 minutes or until the pumpkin becomes fork tender.
- Strain cooked pumpkin. Let it cool.
- Mash the pumpkin. Add roasted crushed unsalted peanut powder, salt, sugar, chopped green chilies, yogurt and chopped fresh coriander leaves.
- Mix well and serve.
