Red Pumpkin Raita

Ingredients
  

  • 1 Cup Chopped Pumpkin
  • 2 Tbsp Roasted Crushed Unsalted Peanut Powder
  • 2 Chopped Green Chilies
  • 1/2 Cup Plain Yogurt
  • 1 Tsp Sugar
  • Fresh Coriander Leaves
  • Salt

Method
 

  1. In a pot take chopped pumpkin. Add 1 cup water and boil it for 10 minutes or until the pumpkin becomes fork tender.
  2. Strain cooked pumpkin. Let it cool.
  3. Mash the pumpkin. Add roasted crushed unsalted peanut powder, salt, sugar, chopped green chilies, yogurt and chopped fresh coriander leaves.
  4. Mix well and serve.
