Ingredients
  

  • 1 Kg Plain White Yogurt
  • 1 1/4th Cup Sugar
  • 1/2 Tsp Cardamom Powder
  • 1/4th Tsp Nutmeg Powder
  • 1/4th Tsp Saffron
  • 1/2 Tbsp Milk
  • A Pinch Of Salt

Instructions
 

  • Take a strainer and mount it over a large bowl or sauce pan.
  • On the strainer put a cheese cloth. Put all the yogurt on it.
  • Keep it overnight with the yogurt tightly wrapped in the cloth. Let most of the water drain from it. This is called chakka.
  • Take the strained yogurt (chakka) in a bowl. Add sugar and mix it. Let the mixture sit for a couple of hours.
  • When all the sugar is dissolved, again take a cheese cloth. Tie it on a bowl and strain all the mixture through it. This way the texture of the Shrikhand will be very smooth.
  • Add saffron to milk. Keep it for 15-20 minutes till the saffron releases it's colour.
  • Mix the saffron milk, cardamom powder, nutmeg powder in the Shrikhand.
  • Garnish it with chopped dry fruits.

Notes

I have used a strainer and a cheese cloth to mix the sugar and strained yogurt (chakka). However if you have puran yantra then you can use it.
The general rule is after straining the yogurt, again measure it and mix half plus a bit more sugar.In my case I had 2 cups of yogurt left so I took 1 and 1/4 cups of sugar. However it depends upon the sweetness of sugar also.You can adjust the sugar accordingly. 
You will get around same volume of Shrikhand  as to how much you are taking plain yogurt. In my case I had around 1 kg of Shrikhand.
