Piyush

This is a very popular Maharashtrian drink. With a couple of added ingredients yogurt can be transformed into a refreshing drink. You can also call it lassi with a twist. Try it to believe it.

Ingredients
  

  • 500 Gm Plain Yogurt
  • 1 Cup Water
  • 1 Cup Sugar
  • 1 Lemon
  • 1/4th Tsp Cardamom Powder
  • 1/4th Tsp Nutmeg
  • A Generous Pinch Of Saffron

Method
 

  1. In a mixing bowl take yogurt.
  2. Mix juice of one lemon.
  3. Add water and sugar to it.
  4. With a whisk dissolve the sugar into yogurt and water.
  5. In a microwavable bowl take about 1 tbsp of water and mix saffron in it. Microwave it for about 10 seconds.
  6. Add the saffron to the sweet yogurt.
  7. Add cardamom and nutmeg powder.

Notes

I have used store bought yogurt. Make the piyush a few hours ahead of serving and keep it in the refrigerator. It tastes good when served chilled.
