Tikhat shira

Tikhat Shira prepared with sooji (semolina) is a common Maharashtrian breakfast dish which is easy to make and can be prepared quickly.

Ingredients
  

  • 1 Cup Coarse Sooji (Semolina)
  • 2 Medium Onion (1 1/2 cup chopped)
  • 2-3 Green Chillis
  • 2 Tbsp Freshly Grated Coconut
  • 2 Stalk Curry Leaves
  • 3 Tbsp Oil
  • 1/2 Tsp Mustard Seeds
  • 1/2 Tsp Turmeric Powder
  • 1/4th Tsp Asafoetida
  • 3 Cup Water
  • Fresh Coriander Leaves
  • Salt

Instructions
 

  • Heat the pan. Roast the sooji on a medium flame till golden brown. Keep it aside.
  • Chop the onions. Cut green chillis into 2-3 pieces.
  • Heat oil in a pan. Add mustard seeds. When mustard seeds starts to sputter, add turmeric powder , asafoetida, curry leaves, cut green chillis.
  • Add chopped onions.
  • Add 1/2 cup of water and cover it with lid and let the onions cook.
  • In a separate pan boil remaining 2 1/2 cup water. 
  • Add it to the cooked onions. Add coconut.
  • Add the roasted sooji. Mix it and cover it with the lid. Let it cook for 5 minutes on medium heat till all the water is absorbed in the sooji.
  • Turn off the burner and let it stay covered for another 5-10 minutes.
  • Garnish it with coriander leaves and serve it.

Notes

You can also add green peas and cashews.
