Potato Sabji
This is a simple potato dish. It is cooked frequently in Maharashtrian households. It does not require a whole lot of ingredients and is quick to prepare. It goes well with chapati (poli).
Kids love it and hence is a good option for school lunch box.

- 3 Medium Potatoes
- 1 Green Chili
- 1 Inch Ginger
- 1 Stack Of Curry Leaves
- 1 Tbsp Grated Fresh Coconut
- 1 Tbsp Oil
- 1/2 Tsp Mustard Seeds
- 1/4th Tsp Turmeric
- 1/4th Tsp Asafoetida
- 1/2 Tsp Sugar
- Chopped Coriander Leaves
- Salt
Instructions
- Boil and cut the potatoes into small pieces.
- In a pot make the tadka by heating oil and adding mustard seeds, asafoetida, turmeric powder.
- Add curry leaves and chopped green chili and grated ginger.
- Add chopped potatoes and saute it for 5 minutes.
- Add grated fresh coconut, salt and sugar and saute it for 5 minutes.
- Just before serving add chopped coriander leaves.
