Potato Sabji

This is a simple potato dish. It is cooked frequently in Maharashtrian households. It does not require a whole lot of ingredients and is quick to prepare. It goes well with chapati (poli).

Kids love it and hence is a good option for school lunch box.

Ingredients
  

  • 3 Medium Potatoes
  • 1 Green Chili
  • 1 Inch Ginger
  • 1 Stack Of Curry Leaves
  • 1 Tbsp Grated Fresh Coconut
  • 1 Tbsp Oil
  • 1/2 Tsp Mustard Seeds
  • 1/4th Tsp Turmeric
  • 1/4th Tsp Asafoetida
  • 1/2 Tsp Sugar
  • Chopped Coriander Leaves
  • Salt

Method
 

  1. Boil and cut the potatoes into small pieces.
  2. In a pot make the tadka by heating oil and adding mustard seeds, asafoetida, turmeric powder.
  3. Add curry leaves and chopped green chili and grated ginger.
  4. Add chopped potatoes and saute it for 5 minutes.
  5. Add grated fresh coconut, salt and sugar and saute it for 5 minutes.
  6. Just before serving add chopped coriander leaves.
