Potato Sabji

This is a simple potato dish. It is cooked frequently in Maharashtrian households. It does not require a whole lot of ingredients and is quick to prepare. It goes well with chapati (poli).

Kids love it and hence is a good option for school lunch box.

  • 3 Medium Potatoes
  • 1 Green Chili
  • 1 Inch Ginger
  • 1 Stack Of Curry Leaves
  • 1 Tbsp Grated Fresh Coconut
  • 1 Tbsp Oil
  • 1/2 Tsp Mustard Seeds
  • 1/4th Tsp Turmeric
  • 1/4th Tsp Asafoetida
  • 1/2 Tsp Sugar
  • Chopped Coriander Leaves
  • Salt

Instructions
 

  • Boil and cut the potatoes into small pieces.
  • In a pot make the tadka by heating oil and adding mustard seeds, asafoetida, turmeric powder.
  • Add curry leaves and chopped green chili and grated ginger.
  • Add chopped potatoes and saute it for 5 minutes.
  • Add grated fresh coconut, salt and sugar and saute it for 5 minutes.
  • Just before serving add chopped coriander leaves.
