Bhogichi Bhaji

Bhogichi bhaji (Mix Vegetable) is a traditional Maharashtrian recipe. It is prepared on the day before the festival of Makar Sankranti which is also called Kite festival. Everybody prepares this recipe as per their family tradition. The following recipe is our family recipe. This recipe is being taught to me by my mother and my grandmother. The dish is served with bhakri which is a type of Indian flatbread.

Ingredients
  

  • 1/2 Kg. Eggplant (3 Cup)
  • 3 Medium Potato (2 Cup)
  • 1 Large Carrot (1 Cup)
  • 1/4th Kg. Drumstick(2 Cup)
  • 1 Cup Wal Beans
  • 1/2 Cup Freshly Grated Coconut
  • 1/4th Cup Roasted Unsalted Peanut Powder
  • 1/2 Tsp Poppy Seeds
  • 1 Tsp Sesame Seeds
  • 2 1/2 Tsp Goda Masala
  • 1 Tsp Coriander Powder
  • 1/2 Tsp Cumin Powder
  • 1 1/2 Tsp Red Chili Powder
  • 4-5 Amsul
  • 3 Tbsp Jaggery
  • 2 Stalk of Curry Leaves
  • 5 Tbsp Oil
  • 1 Tsp Cumin Seeds
  • 1/2 Tsp Turmeric Powder
  • 1/4th Tsp Asafoetida
  • 2 Cup Water
  • Salt

Instructions
 

  • Dry roast poppy seeds.
  • Dry roast sesame seeds.
  • Blend sesame seeds, poppy seeds, coconut and peanut powder together and make a paste adding little water.

Prepare Vegetables:

  • Peel wal and remove all the beans from inside. Discard the cover. We need only the beans. Cook them in boiling water until they are fork tender.
  • Cook drumsticks in boiling water until they are fork tender.
  • Make big chunks of potato, eggplant and carrot.
  • In a pot heat oil. Add cumin seeds. When cumin seeds starts to sputter, add turmeric powder, asafoetida, red chili powder, curry leaves.
  • Add chopped eggplant, potato, carrot and 1 cup water. Cover the lid and let it cook until they are fork tender.
  • Add wal beans, drumsticks and amsul. Mix well.
  • Add the paste, goda masala, coriander powder, cumin powder, jaggery, salt.
  • Let it simmer for 5 minutes on low heat. Add water if needed.
