Method
- Dry roast poppy seeds.
- Dry roast sesame seeds.
- Blend sesame seeds, poppy seeds, coconut and peanut powder together and make a paste adding little water.
Prepare Vegetables:
- Peel wal and remove all the beans from inside. Discard the cover. We need only the beans. Cook them in boiling water until they are fork tender.
- Cook drumsticks in boiling water until they are fork tender.
- Make big chunks of potato, eggplant and carrot.
- In a pot heat oil. Add cumin seeds. When cumin seeds starts to sputter, add turmeric powder, asafoetida, red chili powder, curry leaves.
- Add chopped eggplant, potato, carrot and 1 cup water. Cover the lid and let it cook until they are fork tender.
- Add wal beans, drumsticks and amsul. Mix well.
- Add the paste, goda masala, coriander powder, cumin powder, jaggery, salt.
- Let it simmer for 5 minutes on low heat. Add water if needed.
