Sabudana (Sago) Kheer

During fasting Sabudana (Sago) is used in a variety of ways. Sabudana Kheer is a different take on sabudana. This kheer is unique as sabudana soaks up water and milk and gets puffed up. It provides a different texture to the kheer. The cardamom and saffron adds flavor and colour. The whole combination tastes yummy.

Ingredients
  

  • 1/2 Cup Sabudana (Sago)
  • 2 Cup Milk
  • 1 Cup Water
  • 3/4th Cup Sugar
  • 1/2 Tsp Cardamom Powder
  • A Generous Pinch Of Saffron

Method
 

  1. Wash and soak sabudana (sago) in water for 5-6 hours. The water level should be 1 inch above sabudana (sago).
  2. Soak saffron in 1 tbsp water for 10 minutes.
  3. In a pot heat milk and water. 
  4. When the bubbles starts to form on the corner, add sabudana (sago), sugar and mix well. Let it boil.
  5. Add cardamom powder, saffron and let it simmer for another 10 minutes.
