Sabudana (Sago) Kheer

During fasting Sabudana (Sago) is used in a variety of ways. Sabudana Kheer is a different take on sabudana. This kheer is unique as sabudana soaks up water and milk and gets puffed up. It provides a different texture to the kheer. The cardamom and saffron adds flavor and colour. The whole combination tastes yummy.

Ingredients
  

  • 1/2 Cup Sabudana (Sago)
  • 2 Cup Milk
  • 1 Cup Water
  • 3/4th Cup Sugar
  • 1/2 Tsp Cardamom Powder
  • A Generous Pinch Of Saffron

Instructions
 

  • Wash and soak sabudana (sago) in water for 5-6 hours. The water level should be 1 inch above sabudana (sago).
  • Soak saffron in 1 tbsp water for 10 minutes.
  • In a pot heat milk and water. 
  • When the bubbles starts to form on the corner, add sabudana (sago), sugar and mix well. Let it boil.
  • Add cardamom powder, saffron and let it simmer for another 10 minutes.
