Roasted Tomato Garlic Creamy Soup

This is a humble Italian soup. It does not require a lot of ingredients. The sweet and sour taste of tomato is well balanced by adding cream and freshly cracked pepper. You can serve the soup with regular orĀ garlic bread on the side.

  • 1 Kg. Tomato
  • 2 Medium Onion
  • 1 Garlic Bulb
  • 4 Tbsp Olive Oil
  • 3 Tbsp Cream
  • 2 Tsp Sugar
  • 2 Cup Water
  • Freshly Cracked Black Pepper
  • Salt


  • Line the baking tray with aluminium foil. Preheat the oven to 200 C.
  • Cut tomatoes and onion into half and arrange them on a baking tray. Brush them with olive oil.
  • Cut the garlic bulb into half. Make a aluminium foil pouch and put garlic bulb in it. Add about 1 tbsp of olive oil and keep it on the baking tray.
  • Roast it in the oven for 15-20 minutes.
  • In a blender, add tomato, onion, garlic cloves and blend it to puree.
  • Add fresh cream and blend it again.
  • Strain it, add sugar and salt. Heat it in the pot.
  • Before serving add freshly cracked black pepper. Serve it hot.
