Narali Bhat (Coconut Rice)
Narali Bhat (Coconut Rice) is a sweet rice dish. In Maharashtra it is specially made on the festival of Narali Pornima. Long grain basmati rice is flavored by coconut and jaggery. Cloves, nutmeg and cardamom adds a subtle background flavor to the rice.This rice is served hot or at room temperature. While serving this dish clarified butter is added to it. My mother taught this dish to me. Today on the occasion of Narali Pornima I am posting my mother’s recipe.
Ingredients:
Narali Bhat (Coconut Rice)
Ingredients
- 1 Cup Basmati Rice (Long Grain)
- 1 1/4th Cup Freshly Grated Coconut
- 1 1/2 Cup Jaggery
- 12 Roasted Almonds
- 1 Tsp Nutmeg Powder
- 1/2 Tsp Cardamom Powder
- 1/4th Tsp Turmeric Powder
- 2 Tbsp Clarified Butter
- 4 Cloves
- 2 1/2 + 2 Tbsp Cup Water
Instructions
- Wash rice.
- In a pan heat clarified butter.
- Add turmeric powder, cloves.
- Add rice. Saute for 5 minutes on low flame.
- Add 2 1/2 cups of water.
- When water starts to boil, cover it with lid and let the rice cook for 12 minutes on low flame. Turn off the burner and do not open the lid for another 10 minutes.
- Spread the rice on a plate.
- In the same pan melt jaggery with 2 tbsp water on a low heat.
- After the jaggery is melted, mix nutmeg powder and cardamom powder.
- Add coconut and mix well. Let the coconut cook for 2-3 minutes.
- Add rice and mix well. Saute it for 2-3 minutes. Turn off the burner. Cover it with lid. Do not open the lid for another 10 minutes.
- Garnish the rice with chopped roasted almonds.
